In a perfect world, I would follow my own advice and cover them with foil while baking. The close pan got a little too dark. Slather some frosting on those bad boys and no one will know the difference!
The dough is really sticky. This is part of why they're so good. Less flour means lighter, softer cinnamon rolls.
After refrigerating overnight, dump the dough on a floured surface.
Knead some flour into the dough until it's easy to handle.
Apparently, this is great fun.
I think this is where I flipped the dough over before it gets too big. Flour up the top before you flip it.
About finished rolling...
This is a double batch, that's why it's roughly the size of Bermuda.
Enough rolling already.
Don't be shy with the butter.
Sprinkle on the brown sugar. Now I just look bereft.
Uh oh. The battery died in one camera and we had to break out another. AND the granny glasses came out. Start rolling on one of the long sides of Bermuda.
This dough is a little stickier than I like, so I had to break out the scrapper.
Use your bench scraper to lift and roll the dough.
Look at me go. Like the Bionic Woman.
Cut in 1 1/2" - 2" segments and place, cut side down in prepared pan.
It helps if you stick your tongue out.

Now, we wait... Only for an hour. Settle down.
They will rise better in a warm place, away from drafts.
